Magic Chocolate Cupcakes

This yummy chocolate cake recipe is Dairy, Egg, Soy, Peanut and Tree-nut free!  I’ve made it several times, and it’s not just good for an allergy friendly cake, it’s really good.  Enjoy!

1-1/2 cup unbleached flour
3/4 cup sugar
1/2 tsp salt
1 tsp baking soda
3 tbsp cocoa powder
1 tsp vanilla
1/3 cup oil (canola or corn for soy free)
1 tbsp vinegar
1 cup cold water

Preheat oven to 350 degrees.
Combine dry ingredients (flour, sugar, salt, baking soda and cocoa powder) in a bowl and stir with a fork until mixed.  Make a well in the center and add vanilla, oil, vinegar, and water.  Stir with a fork until well mixed.  Line cupcake tin with paper cupcake liners.  Fill large cupcake tins until 2/3 full and bake in the preheated oven for 20 minutes until a toothpick inserted in the center comes out clean.
